Five-Bean Bake

8 bacon slices
1 large onion, diced
½ c. water
31 oz. can pork and beans
16 oz. can chickpeas, rinsed and drained
16 oz. can kidney beans, rinsed and drained
15.25 oz. can lima beans, rinsed and drained
15 oz. can black beans, rinsed and drained
1 c. ketchup
½ c. firmly packed brown sugar
¼ c. cider vinegar
Preheat oven to 350°. Cook bacon in a large skillet over medium-high heat 8 minutes or until crisp; remove bacon, and drain on paper towels, reserving 2 Tbsp. drippings in skillet. Sauté onion in hot drippings 5 minutes or until tender.
Combine bacon, onion, water, pork and beans, and remaining ingredients in a lightly greased 13x9" baking dish.
Bake, covered, at 350° for 1 hour; uncover and bake 30 more minutes. —8 servings.
