Chocolate Almond Clusters (Diabetic)

2 (2.8 oz.) sugar-free chocolate bars

1 c. almonds, coarsely chopped

1/3 c. almond halves (optional, for garnish)

Line a baking sheet with aluminum foil. Chop the chocolate into small pieces and place in a microwave-safe bowl. Microwave until melted, stirring every 45 seconds to prevent overheating. Remove from the microwave when the chocolate is mostly melted, and continue stirring until it is entirely melted and smooth.

Add nuts to melted chocolate, and stir until well mixed and all the pieces are coated. Using a teaspoon, drop small spoonfuls of candy onto the prepared baking sheet. If desired, top each cluster with an almond half before the chocolate sets. Place candy in the refrigerator for 20 minutes to set the chocolate.
