Canadian Bacon & Vegetable Breakfast Casserole

Olive oil no-stick cooking spray

1 ½ c. fresh broccoli florets, halved

½ c. chopped Canadian-style bacon

½ c. shredded white Cheddar cheese

½ c. chopped roasted red peppers

16 oz. carton liquid egg whites

½ c. fat free milk

¼ tsp. salt

1/8 tsp. ground black pepper

3 wheat English muffins, halved, toasted

Preheat oven to 350°. Spray 8x8" baking dish with cooking spray. Place broccoli, bacon, cheese and peppers in dish. Combine egg whites, milk, salt and pepper in medium bowl until blended. Pour over broccoli mixture in dish.

Bake 35 minutes or until set. Serve casserole on muffin halves. —6 servings.
