Nonstick cooking spray
3 Tbsp. granulated sugar
2 tsp. lemon juice
1½ tsp. cornstarch
¼ tsp. ground ginger
¼ tsp. ground cinnamon
6 large tart cooking apples, cut into ½" wedges (10 c.)
½ c. all-purpose flour
¼ c. granulated sugar
¼ c. packed light brown sugar
¼ tsp. ground cinnamon
1/8 tsp. ground nutmeg
Dash salt
¼ c. unsalted butter, cut into pieces
½ c. chopped walnuts
Vanilla fat-free frozen yogurt or ice cream (optional)
Ground cinnamon (opt-ional)
Coat a 2- to 4-qt. slow cooker with cooking spray; set aside.
In an extra-large bowl combine 3 Tbsp. granulated sugar, lemon juice, cornstarch, ginger and ¼ tsp. cinnamon. Gently stir in apples. Transfer apple mixture to prepared cooker.
For topping, in a small bowl stir together flour, ¼ cup granulated sugar, brown sugar, ¼ teaspoon cinnamon, nutmeg and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in walnuts. Sprinkle topping over apples.
Cover and cook on Low heat setting about 4 hours or on High heat setting about 2 hours or until apples are tender. If desired, serve with frozen yogurt and/or sprinkle with additional cinnamon. —8 servings.
