Cauliflower Salad (Diabetic)

1 head cauliflower, cut into florets
¼ c. low-fat plain yogurt
¼ c. fat-free mayonnaise
2 tsp. yellow mustard
¼ tsp. salt
¼ tsp. black pepper
1 c. frozen peas, thawed
1 c. sliced celery
¼ c. chopped onion
¼ c. reduced-fat shredded Cheddar cheese
2 Tbsp. bacon bits
In a large pot of boiling water, cook cauliflower 8-10 minutes, or until fork-tender. Drain and let cool.
In a large bowl, whisk yogurt, mayonnaise, mustard, salt and pepper. Add cauliflower and remaining ingredients to dressing; mix well. Cover and refrigerate until ready to serve. —8 servings.
