Garlic Butter Herb Prime Rib

2 to 6 lb. prime rib, boned and tied
1 c. butter softened
5 cloves garlic, minced
1 Tbsp. thyme, finely chopped
1 Tbsp. oregano, finely chopped
1 Tbsp. rosemary, finely chopped
1 Tbsp. salt
1 tsp. pepper
Remove prime rib from refrigerator at least 30 minutes before preparing to bring it to room temperature. Preheat the oven to 450°.
In a small bowl mix butter, garlic, thyme, oregano, rosemary, salt and pepper. Rub all of the butter on the outside of the prime rib and place in a roasting pan or large skillet with the fat side up.
Cook 15 minutes. Reduce temperature to 325°. Bake until meat reaches an internal temperature of 110° (about 15 minutes per pound of meat). Remove from oven, cover with foil and let rest at least 20 minutes. (The temperature will rise to 130° for a medium-rare prime rib.) —8 servings.
