BBQ Ranch Pasta Salad

16 oz. mini farfalle pasta

16 oz. bacon, cooked and chopped

2 c. cooked, chopped chicken

12 oz. Cheddar cheese, cubed

1 c. diced bell pepper

1 c. diced red onion

1 c. canned corn, drained and rinsed

1 c. canned black beans, drained and rinsed

BBQ Ranch Dressing:

1 c. barbecue sauce

1 c. mayonnaise

1 oz. packet ranch seasoning

For the Topping:

¼ c. cilantro, chopped

2 c. corn chips

Bring a large pot of water to boil, and cook the noodles according to the package directions for al dente pasta. Drain and rinse the pasta with cold water; set aside.

Mix the cooked pasta, bacon, chicken, cheese cubes, bell pepper, red onion, corn and black beans to a large bowl and stir.

Mix the barbecue sauce, mayonnaise and ranch powder in a small bowl. Whisk together until smooth. Pour the dressing over the pasta salad and stir together to coat the salad evenly. Sprinkle cilantro and corn chips on top, if desired. —16 servings.
