Southern Fried Corn

8 to 10 ears fresh sweet corn
2 Tbsp. bacon grease (not necessary but makes a big differ-ence)
4 Tbsp. butter, divided (or 6 if you're not using bacon grease)
Salt and pep-per
With your corn shucked and cleaned, place it standing up in a large bowl or pan in your sink and cut the kernels off, scraping the cob with a spoon as well.
Heat a cast-iron skillet over medium heat and add bacon grease and 2 Tbsp. of butter (or 4 Tbsp. of butter if you're not using the bacon grease—but the bacon grease adds a lot of flavor). Once melted, add corn, then salt and pepper to taste.
Reduce heat to medium-low and stir frequently, cooking for 20-30 minutes, or until it's cooked to your liking. Immediately before remov-ing from heat, add remaining butter and stir until melted. —6 servings.
