18 oz. box brownie mix, plus the ingredients called for on the package
7 oz. marshmallow fluff
1 c. creamy peanut butter
11 oz. pkg. caramels, unwrapped
2 Tbsp. heavy whipping cream
1¼ c. dry roasted peanuts
½ pkg. chocolate candy melts, can substitute milk chocolate almond bark or white chocolate
Preheat oven to 350°. Line a 913" pan with foil and spray it with cooking spray. Prepare and bake the brownie mix according to the package directions. Allow brownies to cool completely.
In a medium bowl, mix the marshmallow fluff and peanut butter until well-blended. Spread the mixture over the brownies.
Place the caramels in a microwave-safe bowl with the heavy cream. Heat the mixture for 1 minute, then stir. Continue heating and stirring the caramel mixture until it is melted and smooth, heating in 30 seconds increments.
Pour caramel mixture over the marshmallow-peanut butter layer and immediately top with the peanuts, pressing the peanuts into the caramel slightly. Refrigerate until set, about 20-30 minutes. Cut brownies into bite-size pieces and refrigerate.
Place the candy melts in a small pot and melt over low heat. Dip the tops of the brownie bites in the melted chocolate and place on parchment paper. Allow to set about 30 minutes. —12 servings.
