Lime Chiffon Cake

2¼ c. cake flour

1½ c. sugar

3 tsp. baking powder

1 tsp. salt

½ c. oil

8 to 10 eggs, separated

¾ c. cold water

Zest and juice of 2 limes

Green food coloring, if desired

½ tsp. cream of tartar

Preheat oven to 325°. Whisk together the flour, sugar, baking powder and salt. Make a well in the center.

In a separate bowl, mix oil, 5 egg yolks, cold water, lime juice and zest (2 Tbsp.) and food coloring, if desired. Add this to the well in the dry mixture and stir together with a whisk.

In another bowl, put in 1 cup of egg whites and cream of tartar. Beat with a mixer until it forms stiff peaks (do not over beat). Fold into the oil/yolk mixture. Pour evenly into an ungreased tube pan. Bake 45-55 minutes.

Remove from oven when done and invert on bottle to cool. Remove cake from pan and set on plate.

You may glaze the cake with ½ cup powdered sugar and lime juice. Sprinkle some extra zest over the top.
