Biscuit Breakfast Casserole

8-count can Grands Biscuits, cut into quarters

8 oz. pork breakfast sausage, cooked and drained

1 c. shredded Mozzarella cheese

1 c. shredded Cheddar cheese

8 large eggs

1 c. milk or heavy cream

4 oz. can diced green chilies

2 Tbsp. diced pimentos (optional)

½ tsp. salt

¼ tsp. black pepper

¼ tsp. garlic powder

Preheat oven to 425°. Spray the bottom and sides of a 9x13 baking dish with nonstick cooking spray. Cut biscuits into quarters and add to the bottom of the prepared pan. Sprinkle the top of the biscuits with cooked sausage and shredded cheeses.

In a medium bowl, whisk together eggs, milk, green chilies, pimentos (if using), salt, black pepper and garlic powder until blended. Pour over sausage and cheese.

Bake 25-30 minutes, or until set and middle does not jiggle. Let stand for 5 minutes before cutting into squares. Serve warm. —8 servings.
