Hawaiian Meatballs

1½ lbs. ground beef
2/3 c. cracker crumbs
1/3 c. onion, minced
1 egg
1½ tsp. salt
¼ tsp. ground ginger
¼ c. milk
13.5 oz. can pineapple tidbits, drained—reserve syrup
1/3 c. green pepper, diced
Sauce:
2 Tbsp. cornstarch
½ c. packed brown sugar
1/3 c. vinegar
1 Tbsp. soy sauce
Mix the ground beef, cracker crumbs, onion, egg, salt, ginger and milk together and shape into rounded tablespoon-sized balls. Cook, browning on all sides; drain and place in a bowl; set aside.
In a small bowl mix the cornstarch and the sugar until combined. Add in the reserved pineapple juice, vinegar and soy sauce and whisk until well combined. Over medium heat, return pan used to cook meatballs and add the sauce. Bring to a boil and stir for about 1 minute until it thickens up.
Add in the pineapple and the green peppers and stir to combine. Gently add in the meatballs and return the mixture to a simmer for 1 minute. Remove from heat and serve over rice, if desired. —6 servings.
