Slow Cooker Round Steak

1 large yellow onion, sliced
8 oz. pkg. mushrooms, sliced
1½ to 2 lbs. round steak
1 oz. pkg. onion soup mix
2 c. low-sodium beef broth
3 Tbsp. cornstarch
Salt, to taste
Black pepper, to taste
Parsley leaves, optional, to taste, for garnish
Preheat a slow cooker. Add ½ of the onions and ½ of the mushrooms to the slow cooker. Place the round steaks on top of the onion-mushroom mixture. Sprinkle steaks with the onion soup mix, flipping to coat all sides.
Add the remaining onions and the remaining mushrooms on top of the steaks. Add the beef broth. Cover and cook on Low until the steaks are tender, about 8 hours.
Transfer ¼ cup of the cooking liquid to a large measuring cup. Add the cornstarch and whisk to combine into a slurry. Add mixture to the slow cooker and increase the slow cooker heat to High.
Cook steak uncovered, stirring occasionally, until the cooking liquid thickens into a sauce, about 15-20 minutes. Season with salt and the pepper, as needed. Serve garnished with the parsley leaves. —4 servings.
