Easy Oven-Baked Prime Rib

4 lb. prime rib roast, boneless
¼ c. unsalted butter, room temperature
4 cloves garlic, minced
1 Tbsp. kosher salt
2 tsp. olive oil
1 tsp. dried thyme
1 tsp. dried rosemary
1 tsp. ground black pepper
In a roasting pan, add the rib roast and allow it to come to room temperature, about 4 hours.
Preheat oven to 400°. In a small bowl, add the butter, garlic, salt, olive oil, thyme, rosemary and pepper and stir until combined. Spread the butter mixture evenly over the outside of the roast.
Roast the prime rib for 25 minutes. Then reduce oven temperature to 225°.
Cover prime rib with foil and roast until it reaches your desired level of doneness, about 1 hour to 1½ hours for an internal temperature of 145° for medium. (Make sure to start checking the internal temperature of the beef at the 45-minute mark.)
Remove from oven and let rest for at least 20 minutes. —6 servings.
