Easy Chicken Dumpling Casserole

1 Tbsp. olive oil
1 c. frozen carrot, diced
1 c. frozen peas
½ red onion, diced
3 Tbsp. flour
2 c. chicken stock
2 c. shredded chicken
Salt and pepper to taste
1 c. flour
2 Tbsp. baking powder
½ tsp. salt
1 egg
1/3 c. milk
Preheat oven to 350°. Heat a nonstick skillet over medium-high heat and add the olive oil. Once the oil is hot, add the frozen carrots, peas and diced red onion. Cook for about 7 minutes, stirring occasionally, until the onion is soft and translucent. Sprinkle in the 3 Tbsp. flour and stir to coat the vegetables.
Slowly pour in the chicken stock, stirring constantly until the mixture thickens. Add the shredded chicken, season with salt and pepper, and stir well to combine everything. Transfer mixture to a casserole dish.
In a separate bowl, mix 1 cup flour, baking powder, salt, egg, and milk until you have a smooth dough. Use two spoons to form small dough balls and place them on top of the casserole. Gently press them into the chicken mixture. Bake in the preheated oven for 20 minutes or until the dumplings are golden and cooked through. —6 servings.
