Caramel Apple Pecan Bars

1½ c. all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
¼ tsp. salt
1½ c. brown sugar
2 eggs
½ c. melted butter
1 tsp. vanilla extract
1 c. plus ¼ c. coarsely chopped pecans
14 oz. pkg. caramels, unwrapped
¼ c. milk
5 medium fist-sized apples (Cortland), peeled, cored and sliced thin
Preheat oven to 350°. Grease or spray a 913 pan. Mix flour, baking soda, cinnamon and salt in a bowl. Set aside. In another bowl, mix brown sugar, eggs, melted butter, vanilla and 1 cup of the chopped nuts. Stir in dry ingredients. Reserve 1 cup for topping. Pour remainder into pan (it may be hard to spread but it will eventually). Bake for 20 minutes.
While baking, melt the caramels and milk in the microwave 2-3 minutes. Stir carefully after each minute until smooth and creamy. Cool for 5 minutes.
When the crust is done, drain any juice from the apples. Pour the apples on the crust and spread evenly. Pour the caramel over the apples staying about ½" away from the edges. Drop teaspoons of the reserved batter over that spreading as well as you can. Sprinkle with reserved chopped pecans. Return to oven and bake for 15-20 minutes. Cool well before trying to cut. —24 servings.
